It is possible that querytracker already does this... but I just haven't figured it out yet.

Is there a report that will show me: what do I have "out there?"  Perhaps a table with three columns.  1) How many days since I sent it 2) Who did I send it to and 3) What did I send (Query, partial or full)?

I don't think there's an actual report for that, but you can actually tailor it easily enough to do so.  (I did).

I have a folder set up for Sent Queries, and another for Requested Materials.  When you hover your cursor over the icon on the left side, it pops up a box with exactly the dates you're looking for, without having to actually click into that page.

So I can hover over a submission to X, and a box pops up that says I added them to my list on Jan 1, I queried on March 1, got a partial request March 2, and sent the partial March 5th.

That's pretty much what's on the My Query List page.  I put notes on my submissions that say what I sent with a query.  I wouldn't mind having number of days show up someplace, though.

And what Legion said since I started writing this reply.

The icons on the Query List page should give you indication as to which queries are out, rejected, etc, and, like Legi says, mousing over the icon will reveal the details.  As for Marva's suggestion for the number of days out, interesting, but in some cases I'm not sure we really want to know  wink2

Hear you.  Maybe we should call it the: Pour-Yourself-A-Double-Before-Clicking-Here-Report, but the goal of it would be to find those that need to put dumped into the "no response" category and move on.  The reason I went looking for it was to get a sense of how many irons in the fire I had, and if any of them had been effectively extinguished.
