I sent her a full two months ago. I understand that isn't a long time, but I also don't want to poke her if not necessary. Does anyone know what her guidelines/timelines are on fulls? I haven't been able to find anything, outside of that she lists three weeks for the first pages before the full request.

Before contacting an agent, authors should verify and assess the agent's requirements and suitability by visiting the agent's website(s), and becoming familiar with ways to spot and avoid bad agents. A good place to start is Writers Beware, a watch group that helps inform and protect authors from shady practices.
According to this interview it says 6-8 weeks on requested pages. However, it is an old interview from pre-pandemic and I feel that every timeline has got much longer since then so 2 months on a full doesn't sound long.
